Creamy Vegan Tomato Orzo Recipe

Ingredients:

  • 1 tsp vegan butter or olive oil

  • 2 cloves garlic, diced

  • 2 cups vegetable broth

  • 1 cup plant-based milk

  • 14.5 oz crushed tomatoes

  • 1/2 tsp fresh rosemary, chopped

  • 1/4 tsp salt

  • 1/4 tsp black pepper

  • 1.5 cups dry orzo pasta

  • 1/2 cup Treeline Soft Garlic Spread (or your preferred vegan cream cheese)

  • 1/4 cup nutritional yeast flakes

Tip: Many grocery stores now carry Treeline Cheese, but you can also purchase directly from their website for convenience.


Instructions:

Stovetop Method:

  1. In a large pot, melt the vegan butter or heat the olive oil over medium-high heat. Once sizzling, add the diced garlic and sauté for about 30 seconds to 1 minute until fragrant.

  2. Add the vegetable broth, plant-based milk, crushed tomatoes, fresh rosemary, salt, and pepper. Stir until everything is mixed well.

  3. Bring the sauce to a gentle boil, then reduce the heat to low and add the orzo pasta. Simmer uncovered for 8-10 minutes, or until the orzo is al dente (check the package for specific instructions). Stir occasionally to keep the orzo from sticking to the pot.

  4. Once cooked, remove the pot from the heat and set aside. Allow the sauce to thicken as it cools slightly. Stir in the vegan cream cheese and nutritional yeast, letting the cheese melt into the sauce. The result should be a rich, creamy texture that coats the pasta beautifully.
